Peach Cobbler

  • 240g (2 cups) cake wheat flour
  • 300g (1 ½ cups) sugar
  • 10ml (2 teaspoons) baking powder
  • 10ml (2 teaspoons) salt
  • 2 large eggs, beaten
  • 375ml (1 ½ cups) sour cream, divided
  • 1 cup (250ml) full cream milk
  • 10ml (2 teaspoons) vanilla extract
  • 65g (¼ cup) unsalted butter
  • 1kg pitted peaches, sliced into wedges (about 2 cups)
  • 125ml (½ cup) ALL GOLD SMOOTH PEACH JAM
  • 1 cup chilled heavy cream
  • 2 tablespoons sugar

Preparation method

1. Preheat oven to 180°C. Grease a 26cm loose bottomed baking tin with melted butter. 2. In a medium bowl sift together flour, sugar, baking powder and salt. 3. In another bowl beat eggs, ½ cup sour cream, milk and vanilla. Add egg mixture to dry ingredients; beat together until smooth. 4. Add batter to prepared baking tin. Scatter fresh peaches over batter, spoon dollops of jam evenly over batter and peaches. Bake until a skewer inserted into center of cobbler comes out clean, 45-50 minutes. Let cool slightly. Serve with sweetened whipped cream or custard.
