Summer Avo and Papaya Salad

Ingredients

  • 4 avocados, cubed
  • 4 tsps Tru-lem Lemon Juice
  • 3 Papayas, peeled, deseeded, and cubed
  • ¾ cup red onion, peeled and thinly sliced
  • 2 bunches iceberg lettuce, roughly shredded (or your favourite lettuce)
  • ¼ cup coriander or mint, chopped
  • 2 tbls sesame seed, toasted
  • 3 tbls pine nuts toasted (optional)
  • Dressing:
  • ½ cup All Gold Sweet Chilli Sauce
  • 1 tbls All Gold Seville Marmalade
  • ¼ tsp cayenne pepper
  • 1 tsp coriander or mint, finely chopped
  • 2 tbls lemon juice
  • 3 tbls plain yoghurt

Preparation method

1. Pour lemon juice over the cubed avocado and set aside to prevent browning. 2. Dressing: Whisk all the dressing ingredients together until smooth and creamy. Allow to stand for 30 minutes to infuse before adjusting seasoning with salt or pepper. 3. Assembly: Arrange lettuce on a platter. Mix the avo, papaya, onion and salad dressing together and spoon onto the lettuce. Garnish with coriander or mint, sesame seeds and pine nuts.

Serving Suggestion

Chef's tip: For extra crunch add some croutons on the top. Very tasty and easy salad to prepare for entertaining outdoors over the festive season or family functions!
