Summer Fruit Cheesecake Trifle

  • 2 loaves Madeira Cake, sliced thinly
  • ½ cup All Gold Orange Marmalade
  • Fruit mix:
  • 6 tbls All Gold Fruit Jam, melted with 4 tbls water
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries or blueberries
  • 1 cup chopped pineapple
  • 1 cup chopped canned peaches
  • 2 tsps fresh mint, finely chopped
  • ¼ cup granadilla pulp
  • ¼ cup Cointreau (orange), or Crème de Cassis liqueur (berry) (optional)
  • Cream mix:
  • 2 tins condensed milk
  • ¾ lemon juice (100% pure)
  • 2 tubs cottage cheese, smooth and plain
  • 500ml cream, whipped
  • 1 cup Bulgarian yoghurt
  • 1 tsp vanilla extract

Preparation method

1. Get all the different elements ready before assembling. 2. Fruit: Mix all the ingredients for the fruit mix together and allow to marinate in the fridge for 15 minutes. 3. Cake: Spread the madeira cake with the marmalade and set aside until ready to use 4. Cream: Add the lemon juice to the condensed milk and stir until it thickens. Add the cottage cheese and yoghurt and mix well, fold in the cream and vanilla essence 5. Get a deep glass serving bowl and layer the cake, fruit and cream x 2 layers. Finish with the cream on the top and smooth out. 6. Refrigerate until cold and ready to serve. 7. Garnish with chocolate flake or peanut brittle or extra fresh fruits.

Serving Suggestion

Chef's tip: Use any mixture of fruit mixed with the All Gold Jam and liqueur!
