Vanilla Berry Parfait with Meringue Cookies

Serves: 6 Prep Time: 2 HRS


  • Custard:
  • 625ml (2 ½ cups) milk
  • 70g (1/3 cup) sugar
  • 45ml (3 tablespoons) cornstarch
  • pinch of salt
  • 3 egg yolks
  • 5ml (1 teaspoon) vanilla essence
  • 15ml (1 tablespoon) butter
  • Berry layer:
  • 65ml (¼ cup) ALL GOLD STRAWBERRY JAM
  • 15ml (1 tablespoon) cherry liqueur of your choice
  • 250ml (1 cup) fresh blackberries
  • 250ml (1 cup) fresh raspberries
  • 250ml (1 cup) fresh blueberries
  • 12 store-bought meringue cookies

Preparation method

1. To prepare custard, place milk in a medium saucepan, bring to a soft simmer. 2. Combine sugar, cornstarch and salt in a large bowl. Add egg yolks and vanilla, stir well with a whisk. 3. Gradually add hot milk mixture to sugar mixture, stirring constantly with a whisk. Return milk mixture to pan; cook over medium heat until thick and bubbly (about 5 minutes), stirring constantly. Remove from heat. 4. Add butter, stirring until melted. Pour into a bowl; cool completely. Cover and chill at least 4 hours. 5. Combine strawberry jam and cherry liqueur in large bowl. Reserve 6 of each; blackberries, raspberries and blueberries. Fold remaining berries into jam mixture. 6. Reserve 6 meringue cookies. Place remaining cookies in a plastic bag. Crush cookies using a rolling pin. 7. Spoon ¼ cup custard into each of 6 stemmed glasses; spoon 1/3 cup berry mixture over each serving; top each serving with 1/3 cup crushed meringues, ¼ cup custard, and 1/3 cup berry mixture. Top each with reserved berries meringue cookies.
