1x boneless leg of pork or pork loin
15ml (1 tablespoons) barbecue spice
15ml (1 tablespoon) lemon & herb spice
salt and pepper to taste
5 to 7 slices bacon
Glaze:
90ml (1/3 cup) ALL GOLD sweet orange marmalade
90ml (1/3 cup) chilli sauce
30ml (2 tablespoons) Dijon mustard
1. Preheat oven to 180°C.
2. Combine barbecue spice, lemon & herb, salt and freshly ground black pepper; rub mixture all over the roast.
3. Put the roast in a foil lined baking dish. Arrange bacon over the pork, tucking the ends under the roast.
4. Roast in oven for 60 minutes. Combine glaze ingredients. Generously brush the glaze mixture over the roast and continue roasting for a further 15 minutes.
